In an endeavour to breathe some air into the forum, I thought I would add some of my favourite recipes, one at a time. Here's the first... came from a Cypriot friend. Great to take with you when required to contribute a dish to an event.

FETA CHEESE PIE

A dear Cypriot friend, whose BBQ we attended, gave me this recipe for Feta Cheese Pie. Simple and quick to make. Serve warm with a salad or as part of a BBQ. It’s gorgeous!

Amounts below give a very generous depth of filling for one shallow Pyrex dish 23 x 33cm. Takes around 20 mins prep + 25 mins to bake. Enough here for 8-10 people.

INGREDIENTS

400gr Feta cheese (Papantoniou’s has one in salt water, not very expensive, which is ideal)
100gr Halloumi
3 Large (or 4 medium) eggs (whisked). We prefer free-range
250gr Strained yoghurt
½ tsp Bi-carb of Soda or Baking Powder
1 cup of self-raising flour
200gr of butter (I used salted) gently-melted + a little extra to grease the Pyrex dish

PREPARATION

Preheat the oven to 180°C + fan/gas Mk 4.

Cut the Feta and Halloumi cheeses into small pieces (about the size of small peas)
To a mixing bowl add the melted butter, yoghurt and whisked eggs. Mix well.
Add the chopped up cheeses to the mix. Mix well.
Separately, mix the Bi-Carb of Soda in with the flour, then bit-by-bit add to the other ingredients. Thoroughly mix with an electric mixer or wooden spoon. The more air you get in the mix, the lighter the pie will be.

Place the mix into a buttered Pyrex dish and bake in the oven for about 25 mins until golden-brown.

Am not a lover of Feta Cheese but many others can be used as alternative. Looks really nice, thanks
