I'm not a fan but saved this recipe a while back:

http://www.cypriotandproud.com/2013/04/ ... guacamole/

It's also called TARO so you can Google endless recipes for both!!

Thanks DD, there also seems to be a lot of stories about correct peeling, poison etc etc.

The Cyprus traditional recipe (see the link for the recipe below) is good but this food is really heavy...

http://www.yummycyprus.com/index.cfm/id/news/lang/english/page/2/type/128/recID/1821/Kolokasi_-_Taro

I like very much taro chips (preferably with olive oil, lemon, salt, and oregano).

"Taro" or "kolokasi" is like potato, so supposedly many other recipes could be suggested. My mother sometimes uses another local recipe of tossed baby taro in red wine and coriander, which is aromatic and tasty.

Sometimes I'm buying the Cyprus (ready-to-eat) food from Papantoniou include the kolokassi.
You could get small portion for 1-2 euros, just to taste how it made by original recipe.

Thanks segue, I have tasted it and really enjoy it deep sautéed in butter and garlic until its crispy at the edges, also made 'crisps' with it last night. Meant to be a better option than potatoes also.

My wife makes this recipe, using chicken instead of pork, great for a cold night.

In the Philippines this vegetable is called 'Gabi'. It is used in many soup recipes and is a key ingredient in a dish called 'Sinigang', which is usually made with shrimp (hipon) or pork (baboy).
heres a pork Sinigang recipe.

http://panlasangpinoy.com/2017/03/12/si ... with-gabi/

If you're confused by some of the items in the recipe,
Kankong = Spinach or other green leaf veg.
Snake beans = Runner beans.
Knorr Sinigang mix is available here in the Asian stores. There are two stores in town.

My wife makes it and it is excellent.

(The commentary on the video is in Filipino, but easy to follow)
