would anyone know where I could by waterproof coverings for outdoor cushions per metre off the roll.

No, but you can by waterproof outdoor storage boxes for cushions etc. at Homebase, Superhome & many other outlets in Paphos.

Suggest you give Busy Bees in Chloraka a phone call as Bernie makes cushions etc and should be able to give you a contact for a material supplier - or perhaps have some in stock. Shop is just up from Silks/Oulas and next to Railway Inn but suggest you phone rather than go to the shop.
