Pastry:
7 1/2 oz plain flour
4 oz butter
1 tsp vanilla extract
1 egg yolk
Ice water
This is a really lovely dessert, a real dinner party pleaser, every time I have made this it goes vey quickly!. Enjoy.
Filling:
5 oz light brown sugar
4 oz butter
3 fl. oz. honey
2 tbsp sugar
3 fl. oz. whipping cream
1 1/2 packets walnuts roughly chopped & toasted

Mix flour & butter until coarse crumbs are made, add liquids and mix. Press into base & sides of a 9 inch tart tin with removable base. Freeze 15 minutes. Blind bake ( cover base & sides with foil and fill with dried beans) for 15 minutes at 325f. Remove beans & foil, bake a further 15 minutes.
For filling, put first 4 ingredients into a pan, bring to boil, stiring for 2 minutes. Add cream & nuts. Leave to cool for a couple of minutes then pour into pastry case. Bake for approx 30 minutes.

I serve it cold, but warm not hot would be good. A nice thick pouring of cream over it as well.
