I have always wanted to have a bash
at making ouzo sauce (prawns in ouzo sauce)
I dont suppose you could give me the method
and volume of ingreds ?

Hi Neil

I would just pan fry your Prawns in olive oil ( along with a chopped onion & garlic is very nice) then just de-glaze the pan with a shot of ouzo.......much the same method as if you were using brandy or wine in a recipe.

Finish the dish off with a slug of fresh cream ( reduce for about 1 minute) then top with chopped parsley

Delicious!!


Ouzi can be used in a recipe that asks for fennel......The same sort of aniseed hit........but don't overdo the measures.....remember that you can always add to a recipe......but you can't take anything out!!
