Post subject:  Ham/Pease Pudding

Soak ham 2 hrs put back into fresh water bring to boil then simmer till tender skimming fat off as you go-- take out and let cool--reserve the stock for the PP
Peas Pudding
1/2 lb yellow Split peas
1Chopped Onion
1 oz Butter
Soak peas over night then drain.
Put peas and chopped onion in a pan with the stock from ham enough to cover the peas--cover and simmer till soft keep an eye on the pan so it doesn't go dry topping up with more stock if it does.
when cooked sieve and Liquidize (or mash) then beat in butter---season to taste then pour into a greased pie dish and bake 325 for 1/2 hr. Serve hot or let cool and use in a sandwich with the ham. Even nicer fried with some bacon. Marj
