You may already know this but when you've grilled or barbecued meats such as kebabs, lamb cutlets etc a good tip is to prepare a small bowl/cup of olive oil,lemon juice and oregano mixed together and brush this mixture onto the meat once it's cooked and before handing it to your guests.
I saw a chef in Kefalonia do it at a barbecue and have done it ever since. I t really livens up the meat.
