 Post subject: Festive Mince Pies.

Yvonne.....the best Mince Pie recipe ever....

Pastry.
200g plain flour.
50g ground almonds.
140g butter,chopped into small pieces.
Grated rind of 1 orange.
50g caster sugar.
1 egg yolk.

Filling.
200g mincemeat.
1 egg white, lightly whisked.
caster sugar for dusting.

Methos.
Pre-heat oven to 200*C/390*F. Put flour, almonds, butter, orange rind, sugar into food processor and whizz into crumbs. Add egg yolk and a teaspoon of cold water. Pulse until it forms a dough. Wrap in cling film and chill for 30 mins.
Roll out dough thinly and stamp out rounds. Line then into bun or muffin tins. Put in the mincemeat and stamp out smaller rounds for the lids. Brush tops with egg white and dust lightly with sugar.

Variations.
Marzipan shapes for tops.
Walnut or pear pieces into pie with mincemeat.


I use a recipe from Delia Smiths book for mincemeat.
